Chocolate Date & Cashew Mousse with Strawberries
This Healthy Eats recipe is brought to you by Ellwood Thompson’s Local Market. This simple dessert can be made with very little effort. It incorporates only natural sugars from the dates and strawberries making this a great healthy alternative to a traditional chocolate mousse.

Dates: They contain high amounts of polyphenol antioxidants that help aid reduce inflammation. If you’re trying to increase your fiber and potassium, they can help here too!
Cashews: Stay heart healthy with these little guys. Fatty acids found in the polyunsaturated and monounsaturated fats are believed to help reduce your LDL cholesterol counts and triglyceride levels.
Strawberries: Vitamin C is the center of attention here. This antioxidant will help improve your immune system and to help replenish your skin. Other antioxidants found in strawberries 👉 Pelargondidin, Ellagic acid, Procyanidins, Ellagitannins.
Ingredients
- 2 cups dried dates
- 2 ⅔ cups of raw cashews
- ½ cup of cocoa powder
- 2 teaspoons vanilla extract
- Pinch salt
- Fresh strawberries
Directions
- Cover dates and cashews with hot water and let sit for 1 hour.
- Drain dates and cashews and put them into a blender with 1 ½ cups of water.
- Blend the mixture until smooth, stopping every 15 seconds to move the mixture around. Add up to ½ cup more water if needed.
- Add in cocoa powder, salt and vanilla. Continue to blend.
- Chill mixture for at least 2 hours before serving.
- Top with strawberries or add your favorite fruits.
