Turmeric Cauliflower Ingredients

  • 2 heads of cauliflower
  • 1 stick of unsalted butter
  • 1 TBSP turmeric
  • 1 tsp kosher salt

Cauliflower Puree Ingredients

  • 1 head cauliflower
  • 1 cup heavy cream
  • 1 cup of water
  • 1 tsp salt
  • 1 tsp unsalted butter
  • 1 tsp white truffle oil (optional)

Directions

  1. Preheat your oven to 425 and set a small stockpot on the stove over medium-low heat.
  2. Start with the cauliflower, cut both directly in half to reveal the root in the center. With the point of your knife cut out the root in a V  pattern and pick the florets apart. The root can be used for the puree.
  3. Add the cauliflower roots and the florets from 1 head of cauliflower to pot with cream, water, salt and 1 stick of butter.
  4. Once the cream starts to rise, (about 10-15 min) reduce heat and cook on low heat for 5 more minutes until cauliflower is soft but still has body. (*Too crunchy will result in a puree with chunks, too soft and the puree will not stand up)
  5. Meanwhile, on a different burner in a small saucepot, melt your tsp of butter with the tumeric and kosher salt.
  6. Once melted, mix the butter well and toss with the remaining uncooked cauliflower florets in a mixing bowl.
  7. When florets are covered in turmeric butter, spread them evenly on a baking sheet and cook in the oven for 10-12 minutes until just browning slightly.
  8. Moving Back to the Puree: When the cauliflower in the cream is done, transfer to your blender in small batches. Note: You do not need all of the liquid, just use enough liquid to make sure the mixture moves in the blender. *Once pureed you can fold in the truffle oil for an extra layer of flavor.
  9. Plating: Lay a spoonful of puree’ on the plate. Place the cauliflower on top then sprinkle sunflower seeds liberally on the cauliflower.

Spiced Sunflower Seed Ingredients

  • ½ cup roasted unsalted sunflower seeds
  • ¼ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp dry mustard
  • 1 tsp fresh thyme picked

Spiced Sunflower Seed Directions

  1. Simply mix all the ingredients together in a bowl until the seeds are coated.
  2. sprinkle sunflower seeds liberally on top of the completed cauliflower dish.
