Sweet Potato Chaat

Chaat = Deliciousness. It is an Indian cuisine staple and is prepared all throughout the country. This vegetarian dish is great as a snack or as a full meal.

Ingredients
- 1 Large Sweet Potato
- 1/2 an Avacado ( Peeled and Cut)
- 1 teaspoon Chaat Masala (Buy pre-made or make yourself )
- 1 teaspoon of Lemon Juice
- 1.5 teaspoons of Tamarind Chutney (Buy pre-made or make yourself)
- 1 tablespoon of Mint Chutney (Buy pre-made or make yourself)
- 1/2 teaspoon of Cayenne Pepper
- 1 tablespoon of Pomegranate Seeds
- 2 teaspoons of Chiffonade Mint and Cilantro
- 2 long sticks of Ginger
- 1 teaspoon of Pumpkin Seeds
Directions
- Preheat the oven to 450 F
- Prick the sweet potatoes all over and roast them in a preheated oven by turning them a couple of times while roasting. When cool, peel and cut them into chunks.
- Peel and cut avocadoes into chunks.
- Put the sweet potatoes on a serving plate. Sprinkle the chaat masala
- Squeeze the lemon juice over the dish.
- Add the tamarind chutney, then the mint chutney.
- Garnish with avocado chunks, pumpkin seeds, and pomegranate seeds.
- Top it with a chiffonade of mint and cilantro and ginger sticks.
