Sweet Potato & Black Bean Salad

We are really excited about this dish! Not only is it delicious, but it offers a lot of nutritional value to your diet. Sweet potatoes are highly nutritious with 769% of the daily value of vitamin A coming from only one cup. They are also packed with ample amounts of Vitamin C, B6, beta-carotene, and antioxidants.

In one cup of black beans, you are receiving 15 grams of fiber! The National Library of Medicine also suggests that black beans may also help reduce an increase in blood sugars after consumption which could directly reduce the risk of weight gain and diabetes.

Ingredients

  • 4 large Sweet Potato, 1-inch dice
  • 1 large Red Onion, 1-inch dice
  • 3 Red Bell Pepper, 1-inch dice
  • 3 TB Blended Oil
  • 1.5 TB Kosher Salt
  • ¼ TB Black Pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp chili powder
  • 1 can Mexican Seasoned Black Beans, drained and rinsed
  • ¼ cup Chili Dressing (see below)
  • ¼ cup Cilantro, chopped

Directions

  1. Heat oven to 425 degrees F.
  2. Toss sweet potatoes, onions, and peppers with oil, salt, pepper, and spices
  3. Spread out on parchment-lined sheet pans.
  4. Roast, turning occasionally until potatoes begin to brown on corners and are just tender inside. Remove from oven; keep on pan until ready to mix with dressing.
  5. Put vegetables in a large bowl with beans and toss with dressing and cilantro. Taste and adjust seasoning if necessary. Serve warm or at room temperature.

Chili Dressing Ingredients

  • 2 cloves Garlic, sliced
  • 2 ea Jalapeno, deseeded and chopped
  • 160 grams Lime Juice
  • ¼ cup Olive Oil
  • ¾ cup Neutral oil (vegetable or grapeseed)
  • 1.5 TB Agave nectar or honey

Chili Dressing Directions

  1. Place garlic, jalapeno, lime juice, and honey in the blender.
  2. Puree until smooth.
  3. Slowly add oils and emulsify the dressing.
