Moroccan Chickpea Stew

Moroccan garbanzo soup

This Healthy Eats recipe is brought to you by Amuse Restaurant at The VMFA. Chef Greg Haley was nice enough to send us a delicious recipe that you can make at home. This hearty dish is easy to make and has many health benefits.

The chickpeas, or garbanzo beans, are an excellent source of fiber and protein! The fiber will help fill you up and aid in curbing your appetite, helping you to maintain a healthy weight.

Ingredients

  • 1 small can chickpeas, rinsed
  • 1 tsp chopped garlic
  • 1 medium yellow onion, diced
  • 1 medium sized turnip, peeled and diced
  • 1 large Yukon gold potato, peeled and diced
  • 1 small butternut squash, peeled and diced
  • 1 tsp cumin seed, toasted and ground
  • 1 jalapeno, seeded and diced
  • 1 ea cinnamon sticks
  • 1 pinch saffron
  • 1 can of diced tomatoes
  • 1 quart of vegetable broth
  • 1 lemon, zest and juice
  • Salt and pepper

Directions

  1. Sauté onion and garlic until caramelized
  2. Add the rest of the ingredients and simmer until veggies are done
  3. Garnish with parsley and preserved lemon if available

Note: Reduce sodium as need if you are on a low sodium diet. Please consult with your dietitian before starting any new meal plan.
