Coconut Cashew Cream Parfait
This Healthy Eats recipe is brought to you by Ellwood Thompson’s Local Market. Today we’ll be making a vegan coconut cashew cream parfait with fresh fruit and granola.
Health Facts:
Cashews: High amounts of the antioxidants, lutein & zeaxanthin, are found in cashews. These antioxidants help to protect our eyes for degenerative damage as we age. They’re also a good source for copper, phosphorus, iron, B-6, Vitamin K, and Vitamin E.
Coconut Milk: Is it good for you? It’s ok in moderation, just not every day. It has higher amounts of saturated fats that could affect your health. On the other hand, it does contain lauric acid which is known to help improve your immune system.
Ingredients
- 1 ½ cups cashew
- 1 cup coconut milk (make sure to use a mix of cream and milk from a can)
- 1/2 cup water
- 5 dates
- 1/2 cup of blueberries and strawberries
- 1/2 cup of granola
- 1 tsp lemon juice
- Pinch salt
Directions
- Soak the cashews in hot water for 1 hour and then drain.
- Blend cashews, dates, and coconut milk in the blender until smooth.
- Chill in the fridge for at least 2 hours.
- Use as an alternative for yogurt and eat with berries and granola.
