BBQ Lentil Sliders

This Healthy Eats recipe is brought to you by Ellwood Thompson’s Local Market. Today we’ll be making BBQ lentil sliders. They’re vegan-friendly so everyone can enjoy them!

Nutritional Facts:

Lentils: To start, there are many types of lentils. Beluga, Puy, Green, Yellow, and Red to name a few. We used brown in the picture. These bad boys are packed full of protein and come stocked with 90% of your suggested amount of Folate. You’ll also find them to be high in Phosphorous, Manganese, Iron, Copper, and Potassium.

Ingredients

  • 1 ½ cups dry brown or green lentils
  • 5 cups water or stock
  • Bay leaf
  • 1 yellow onion, sliced
  • BBQ sauce
  • Safflower oil

Directions

  1. Rinse lentils and add to a pot with the water or stock.
  2. Bring lentils to a boil then reduce heat and simmer until lentils are cooked but not mushy.
  3. Drain lentils and remove bay leaf.
  4. While lentils are cooking, sautee the sliced onion in a with safflower oil until soft and translucent.  Season with salt and pepper.
  5. Toss cooked lentils with the cooked onions and BBQ sauce.
  6. Serve on slider bun topped with your favorite coleslaw. Add sauteed veggies or braised greens as a side dish.
  7. Enjoy!
