Hemp Seed Pesto & Spinach Pasta

Health Facts:
Hemp Seeds: They contain all the needed amino acids to classify it as a complete plant-based protein. They are high in fat so don’t overindulge. You will also find that they are a good source of Omega-6 & Omega 3.
Garlic: What’s a pesto sauce without the garlic! In just one small clove of garlic, you’ll find it packed with important vitamins and minerals like Vitamin B6 & C, Manganese, and Selenium. Other studies have shown that it could help reduce blood pressure & lower cholesterol.
Ingredients
- 2 cups arugula
- 1 cup basil
- 1 cup hemp seeds
- 1 teaspoon garlic, minced
- 1 tablespoon nutritional yeast
- ½ teaspoon pepper
- 1 teaspoon salt
- 2 ½ tablespoon lemon juice
- ½ cup safflower oil
- 4 servings of spinach pasta
Directions
- Boil pasta until done. Drain and put back in the pot.
- Put all ingredients except oil in the food processor.
- While the machine is on, slowly add in oil.
- With pasta still warm, add pesto to your liking.
Tip: Add your favorite sauteed or grilled vegetables to enhance this dish!
